Check out this New Stack article about Rancher 2.7.2. Some important points, they are re-launching the Rancher Academy. I did these courses and free certs a few years ago and they were very good and not your common cake walk, well worth your time. I have not looked at all of these new extensions etc and really only use Rancher Desktop and K3S, not RKE and Rancher per say but will try to wade through and maybe pop in some posts if time and effort allows.
