I currently have a VBR v12 server running as an ESXI VM. Looking to move it off VMware to new hardware. Was thinking the easiest way might be to setup the new server as a Hyper-V host and then use the converters available (starwinds etc) to make it into a Hyper-V VM. Thoughts?

You can just do a configuration backup, create a new VM and restore after the initial setup. That would be easier.
maybe create new VBR, which will backed up current VBR, and then restore to hyperV
or use suggestion above - rebuild new VM and provide recovery of backup configuration after binaries of Veeam will be installed
