Can anyone guide me for the best practise while configuring Protection Group options.

It depends what your needs are, I suggest you read the Veeam Quick start guides:

As for your screenshots, I’d suggest installing the changed block tracking drivers to reduce backup duration, it’ll need a reboot to take effect, the subsequent checkbox offers the ability to do so, but be careful selecting that for all your servers in production hours!
