Thanks a lot for the wonderful write-up. I always encourage people to use TAGs as it's a brilliant way to manage your VMs and your backups. I also tend to TAG the VMs that require Copy/Replication as normally we don't replicate/Copy everything to DR.
Yes it is quite easy to query for not-tagged VMs. Simple like this: $NotTaggedVMs = @()Get-VM | ForEach-Object {if((Get-TagAssignment $_) -eq $null) {$NotTaggedVMs += $_}} I normally start such a script scheduled. It could tag VMs or report per mail. This will help me for sure

Hi,If they have regular backups hopefully from a trusted backup solution like Veeam, then they can just restore the VMs. They just need to delete the existing encrypted datastore and start restoring to a new datastore. The loss will be as per RPO.There are various products/solution that protects VMware environment against ransonware
It all boils down to your agreed BCP/DR policy and what RPO/RTO you have defined. I agree with the recommendations given by Jochen about splitting the VMDKs not more than 2TB as a backup job is per VMDK than per VM so that limits the scope of size of the data to 2TB max.
